Why ferment your grains?

Many healthy societies consume products made from grains. In fact, it can be argued that the cultivation of grains made civilization possible and opened the door for mankind to live long and comfortable lives. Problems occur when we fractionate them into bran, germ and naked starch; when we mill them at high temperatures; when we extrude them to make crunchy breakfast cereals; and when we consume them without careful preparation.

Grains require careful preparation because they contain a number of anti-nutrients that can cause serious health problems. Phytic acid, for example, is an organic acid in which phosphorus is bound. It is mostly found in the bran or outer hull of seeds. Untreated phytic acid can combine with calcium, magnesium, copper, iron and especially zinc in the intestinal tract and block their absorption. This is why a diet high in improperly prepared whole grains may lead to serious mineral deficiencies and bone loss. The modern misguided practice of consuming large amounts of unprocessed bran often improves colon transit time at first but may lead to irritable bowel syndrome and, in the long term, many other adverse effects.

Other anti-nutrients in whole grains include enzyme inhibitors which can inhibit digestion and put stress on the pancreas; irritating tannins; complex sugars which the body cannot break down; and gluten and related hard-to-digest proteins which may cause allergies, digestive disorders and even mental illness.

Keep your immunity up

School has started, winter is approaching and there are the usual concerns over the variety of health challenges that accompany the change in seasons. Here are some simple things to do to help your body maintain a normal, healthy immune response.

  1. Kids are carriers of many illnesses. Teach your kids to wash their hands thoroughly and frequently. Have them sing Happy Birthday twice while washing to make sure it is a complete job.
  2. Sunshine exposure helps maintain your immunity through vitamin D production. During winter, supplementing with Olde World Cod Liver Oil containing vitamin D is a good way to obtain this important vitamin. You also gain all the side benefits of the fish oil.
  3. Increase vegetable and fruit intake for the vitamin C content. Vitamin C is important to maintaining normal healthy immune responses.
  4. Reduce meat consumption as it acidifies the system and reduces the body’s normal immune responses.
  5. Your gut contains almost 80% of your immune system. Treat it well by drinking lots of water, eating clean foods, especially fiber containing fruits and vegetables as well as consuming a couple servings a day of fermented dairy, like kefir and yogurt. These foods contain healthy levels of probiotics or beneficial bacteria, that helps keep your digestive tract happy.
